Production zone: Hills located 10 km north of Lucca, with calcareous soil, at an altitude between 150 and 300 meters above sea level with a southern exposure and temperature ranging between 0 and 30 degrees.
System of production: Olives of the following types: Frantonio, Leccino, Pendolino and Maolino. Picked by hand from the branch before they are fully ripe, they are still not very juicy but have that intense flavour that they lose later on. Crushed and pressed just once at room temperature, in our own press.
Harvest and pressing season: November and December.
Characteristics: Low acidity oil (0.3 – 0.5) that is more healthful and digestible, with high fluidity so that it yields more. The colour is green with a strong flavour and sharpness when new, mellowing to golden yellow with a more delicate flavour and aroma as the weather begins to warm. Stored in the dark in underground vats lined with slate, the ideal type of stone to ensure impermeability. The green glass of the bottles protects the colour from the light and keeps the oil from turning rancid.
Duration: about 2 years.
Production: average production of an olive tree is about 12 kg. of olives, with an average output of oil on the order of 15%.
Annual oil production is between 8,000 and 10,000 liters.
